Step-by-Step Culinary Method
Slow Chocolate Melt
Melt 400g chopped dark chocolate and 220g butter over a simmering water bath. Whisk in dark cacao powder until uniform and set aside to cool slightly.
6-Minute Egg Aeration
Whip 6 room-temperature eggs with both sugars and vanilla for exactly 6 minutes on high speed. The mixture should become pale, frothy, and triple in volume.
Gloss Emulsion Fold
Pour the warm melted chocolate into the egg foam in a gentle stream while folding with a spatula. The temperature synergy creates the shiny top crust.
Flour Fold & Bake
Sift in flour and fold gently until no dry flour pockets remain. Pour into a 9x13 inch parchment-lined metal pan. Bake at 170°C (340°F) for 28–32 minutes.
