Step-by-Step Culinary Method
Mastering the Meringue Foam
Whip aged egg whites on medium until soft clouds appear. Gradually add caster sugar one tablespoon at a time over 8 minutes until sugar is completely dissolved and meringue is mirror-glossy.
Structure Stabilization
Gently sprinkle vinegar, starch, and rosewater over meringue. Fold with 4 precise strokes with a rubber spatula.
Slow Low-Temp Dehydration
Shape into an 8-inch disk with raised edges on parchment paper. Bake at 110°C (230°F) for 85 minutes without opening the oven door.
Thermal Rest
Turn off the oven and prop door open with a wooden spoon. Allow pavlova to cool slowly for 2 hours to avoid cracking.
Assembly & Presentation
Whip mascarpone, heavy cream, honey, and vanilla to soft cloud peaks. Spoon into pavlova center, dress with berries, pistachios, and rose petals.
