Place salmon skin-side down in a smoking hot skillet with olive oil. Press gently for 3 minutes for crisp skin, flip and cook 2 minutes for medium-rare.

Fold fresh dill, mint, and pomegranate into warm saffron quinoa. Plate with seared salmon, pine nuts, and lemon tahini.
